Broadside

Smoke a double old-fashioned glass with Angostura bitters, overproof rum and cinnamon. (Ignite ramekin containing bitters/overproof rum mixture and cinnamon stick. Extinguish with inverted glass, allowing smoke to collect on interior while remainder of cocktail is prepared.)
2 oz. Hayman’s Royal Dock Navy Strength Gin
.75 oz Fresh lime juice
.75 oz. rooibos tea syrup*
5 dashes Angostura bitters
Shake above ingredients until well-chilled. Double-strain into smoked double old-fashioned glass and serve. *Rooibos tea syrup: Brew double-strength rooibos tea and combine immediately with an equal amount of cane sugar. Stir until sugar dissolves; fine-strain; refrigerate.

Steelpan Swizzle

2 oz. Angostura® 5 yr rum
.5 oz. lapsang souchong syrup*
.5 oz. pineapple juice
.5 oz. lime juice
1 barspoon St. Elizabeth’s Allspice Dram
10 dashes Angostura® aromatic bitters
Combine first five ingredients in collins glass. Add crushed ice and swizzle until glass is well-frosted. Top with 10 dashes of Angostura bitters. Garnish: Mint sprigs, dusted with ras el hanout spice mixture. *Lapsang souchong syrup: Brew double-strength lapsang souchong tea and combine immediately with an equal amount of cane sugar. Stir until sugar dissolves; fine-strain; refrigerate.
