Shrimp Toasts

Ingredients

  • 6 water chestnuts
  • 1 tsp garlic, minced
  • 1/2 tsp ginger, chopped
  • 2 black Chinese mushrooms, soaked in hot water for 30 minutes
  • 1 Tbsp Chinese chili sauce
  • 2 egg whites
  • 1 tsp cornstartch
  • 1 lb shrimp, peeled and deveined
  • 1 tsp salt
  • Vegetable oil for frying
  • 6 slices white bread, lightly toasted

Instructions

  1. In a food processor, process all ingredients except bread to a paste like consistency.
  2. Trim crusts from bread.
  3. Paste bread with filling to about 1 1/2 inch thickness.
  4. Cut into squares or triangles.
  5. Heat oil in a large frying pan,fry toasts until golden brown on both sides.
  6. Drain and serve with soy or plum sauce.
