Hollandaise Sauce

Ingredients

  • 8 Tbsp butter
  • 3 egg yolks
  • 1 Tbsp fresh lemon juice
  • 1/2 tsp Angostura® Aromatic Bitters
  • Dash cayenne pepper

Instructions

  1. Melt butter in a 1-cup measuring cup in microwave.
  2. Place egg yolks, lemon juice, bitters and cayenne pepper in blender and blend on low for 15 seconds.
  3. Continue running blender on low, and slowly pour in butter. Continue to blend for 30-45 seconds more.
